Two sessions across four weeks, beginning with an early-morning visit to observe the opening routine. We reviewed the supplier delivery schedule, the prep sequence and staff task allocation. A written summary followed each session.
What shifted
By rescheduling two supplier deliveries and reassigning the bread prep to his morning staff member, Lee moved his own start time from 4 am to 5:30 am. A change of ninety minutes — which, he noted, felt like a completely different life.
